In the movie, two minions are working at their respective desks. One of them has banana. When he was about to eat, the other one comes and asks to share the banana. When the request was denied they start fighting. In the meantime, a tall minion comes in and tells them to stop fighting. Then he sees the banana and start fighting with them.
They keep fighting and enter the rocket factory. They escape the explosion and exit a factory, of course with a banana and still fighting.
When they get into canteen, still fighting, and more minions chase and join them in the fight. They end up in a place, what seem to be a workplace, with more minions. They all fight for banana but alas, banana gets squished and falls into a hole.
A minion comes with Bapple (Apple in Minionese) and draws attention of all those sad minions. The movie ends with all the minions chasing the one with Bapple.
Quotes from movie
So much so for the love of banana, there is a Banana song. The minions sing this song in the teaser trailer of Despicable Me 2. The song is the minionese version of the song Barbara Ann by the Beach Boys.
4 minions are featured in this song, 3 of them are singing while one is playing his torotot. One of them really gets irritated with torotot and he punches him at the end of the song.

So why Banana?
There are many reasons for us humans to eat a banana. Since minions are homunculi they might be eating bananas for the same reasons. The creators of minions may have decided to make them love bananas because when a minion says banana it sounds way to funny and any other fruit or veggie may not have sounded as funny as banana.
Bananas are the most popular fruit in the world. Bananas grow almost everywhere on this earth. Some horticulturists suspect that bananas are the first fruit in the earth and originated in the jungles. Since minions have been living on this earth from the beginning, they might have found bananas and no other food in the early days. May be for this reason minions have strong relation with bananas.
Minions are seen happy more than sad and angry. The reason for their happiness is banana. Why? Because bananas contain tryptophan, a type of protein which is converted by our body into serotonin – the happy-mood brain neurotransmitter known to promote relaxation and improve mood.
I don’t know about you but I find minions and bananas look good together, may be because both are yellow and cylindrical in shape. I see minions in bananas and bananas in minions. LOL!
